We started in Hackney in 2018. Market pitches, private parties, the occasional festival. London is good for that – there is always an event, always a market, always somewhere to park the truck and sell food.
But London is also expensive. Pitch fees. Insurance. The cost of getting the truck in and out of the city. And the competition is extraordinary – every kind of food imaginable, all fighting for the same customers, all on the same weekend.
How Wales Happened
Tania’s family are from Aberystwyth. We had been visiting for years. One summer we took the truck up for a family event and somebody asked if we would set up at the seafront for the weekend.
The queue on the Saturday was longer than anything we had seen in London. Same food, different place. We drove home on the Sunday and had the conversation that week.
We moved in 2023. The overheads dropped by more than half. The pitches cost almost nothing. The community came back to us week after week in a way London crowds do not. West Wales turned out to be exactly the right place for what we do.
